Friday night our family went over to the Lindsays house for a Mayan feast not to mention we celebrated Emma's birthday, Cai's birthday, and Christmas all in one night! Last week, we studied about the ancient Americas with an emphasis on the Maya Indians. We decided to get together with a joint effort and have a Mexican feast. Yum!

Homemade chicken enchiladas using corn tortillas with homemade black refried beans and Mexican Rice.

Apple Enchiladas with ice cream and Kahlua cake
I made the chicken enchiladas, black refried beans, and apple enchiladas while Candi made the rest. She made salsa, cheese dip, guacamole, tacos with the fixins, and the Kahlua cake. I all tasted great and we left feeling stuffed.
I know this was not a completely authentic meal but corn was an important food source for the Mayans so we had lots of corn products...corn tortillas, corn taco shells, corn chips, corn in the rice, and Mexican style corn!
