Cabbage Patch Stew

I made this recipe yesterday for our New Year's meal! We don't believe in those superstitions but it is always fun anyway. I taste great and most of the kids will eat it.

cabbage and carrots

Ground meat with onions and celery browning.

Red kidney beans

Yummy stew!

Cabbage Patch Stew

1 ½ lbs. ground beef
4 celery ribs, chopped
1 medium onion, chopped
7 cups chopped cabbage
2 cans (16 oz. each) kidney beans, rinsed and drained
1 can (28 oz.) diced tomatoes, drained
3 cups beef broth
1 can (15 oz.) tomato sauce
2 med. Carrots, chopped
½ tsp. sugar
Pepper to taste

In a large saucepan or Dutch oven, cook the beef, celery and onion over medium heat until meat is no longer pink and vegetables are tender. Add the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until cabbage and carrots are tender. Yields 14 servings (3 ½ quarts).

I use my food processor to chop all of my vegetables which help the children eat it better. I actually use the food processor to shred the cabbage instead of just chopped pieces.
*We had a successful day looking at houses. We have found the house that we love and fits everything we have been looking for. We will be doing all of the paperwork and submitting an offer on Monday morning. It is listed under a relocation company which will help instead of dealing with an individual. Trusting that if this is the house the Lord would have us to have that it will all work out. I will keep you updated.*
