Help for Growing Families

This week I thought I would participate with an easy recipe that goes a long way and my children love it. It is a great dish to take places such as cover dish dinners and to families who need help with a meal such as after having a baby. It also freezes well.

Cheesy Chicken Spaghetti

3 chicken breast
1 can of chicken broth
6 cups of water
1 lb of velveeta
1 can of Rotel tomatoes
16 oz spaghetti noodles or your noodle of choice
(I have used shells, rotini, and macaroni noodles!)

Boil chicken breast in water and broth. Pull chicken breast out and cool to shred. While liquid is boiling, add rotel tomatoes and spaghetti noodles. Once noodles are cooked, add processed cheese (cut in small pieces) and shredded chicken. Stir until cheese is melted and serve.

Have you ever prepared this using cheddar or some other cheese rather than Velvetta? We can't eat Velvetta.
