1 lb ground beef or ground turkey
2 cans of enchilada sauce
1 1/2 cups of shredded cheese
1 package of flour tortillas (6 in. each and 10 per package)
Heat oven to 350 degrees. Lightly grease 13x9 inch glass baking dish. In a skillet, cook beef over medium-high heat, stirring occasionally until cooked; drain. Stir in 3/4 cup of enchilada sauce and 1 cup (handful of cheese because I don't measure my cheese) of the cheese. Spoon enchilada filling onto tortillas; roll up and place seam side down in baking dish. Pour remaining sauce over top; sprinkle with remaining cheese ( I put enough until I think it is enough!) Bake 15 to 20 minutes or until hot.
