Recipe…Needs Your Help

Pancake-Sausage Muffins

2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups milk

2 eggs
1/3 cup melted butter
1/2 pound breakfast sausage

Mix dry ingredients together. Add milk, eggs and melted butter. Stir in browned sausage.

Pour batter into 18 buttered muffin tins. (I don’t recommend paper muffin liners for this as it will stick.) Bake at 350° for 15-20 minutes or until the muffins are lightly browned. Serve with a lovely drizzle of syrup! (I used my homemade syrup!)

*This recipe needs your help.  I was going to play with the recipe but thought I would see if any of you had any ideas to save me time.

  I made these and they were ok.  Some of the kids loved them however most hated them.  I like the concept of these for a breakfast muffin but need some ideas how to make them better.

What do you recommend?

Let's see I would tweek it by doing half unbleached white flour and half ww flour. You could even decrease the ww flour more as that's usually a hard taste for kids to adjust to.

Maybe add some honey or some sort of sweetener.

I would try whole wheat pastry flour. It is not as bitter as WW. Then add a little Stevia or honey.

You could soak your WW flour, which will soften it greatly. It will feel like white flour and still have all the health benefits of WW flour.

Maybe putting the sausage into the bottom and pouring the rest of the batter on top, this way, if anyone had a problem with the sausage, they could eat the biscuit and not eat the sausage. There is also no herbs in this, which might help. Add a little bit of sage, it will make the whole dish sing! (But I am not sure if it will go well with syrup :D).

It sounds like a lot of sausage. I'd personally prefer either more egg for more of an egg casserole kind of thing or more bread so it was more muffin like. But then again, I'm 0 for 2 this week with my cooking, so I should probably not be dishing out cooking tips! :)

hmmm... those sound really good. I think some sweetener too, but I'm a recipe follower.... not a tweaker.

I'm with Kristal...I'm not a good tweaker person. Sounds like you got some good ideas to get you going and that the WW might have been some of the problem. If you make changes and it gets thumbs up, please repost so I can try it out. :)
